Raw mango spicy and tangy jam is a tradional prepation generally in North India. Chunda/ raw mango chutney is prepared in many ways. This is basically made with raw mango, jaggery/sugar, few spices. No additives and preservatives. It can be made by sun-drying/cooking all the spices together and can be stored for an year. This authentic dish goes well with paratas and bread. kids enjoy it’s taste like anything. In mangoes season you can prepare and store in dry place for the entire year! You can make few variations in this as per your taste. You can avoid spices/keep minimal spices, sugar & jaggery in equal measures. All just the way you love to eat! Here is the recipe.
Raw mango- 1 kilo
Jaggery/sugar- 4 cups
Chilli powder-2 tsp
Cumin powder- 2 tsp
Black salt- 2 tsp
Garam masala- 2 tsp
Turmeric- 1 tsp
Salt- 1 tsp
✓ use dry spoons and utensils for prepation as you have to preserve the whole year.
✓ Instantly you can prepare with one or two mangoes. Take all ingredients except chilli powder cook till one string consistency. Add chilli powder, cool and store.

Total time: 40 minutes
1. wash and pat dry mangoes well. Peel &grate.
2.In a pan take jaggery melt it and add grated mango cook well.
3. Now add all spices one by one and cook well until it thickens.
4. Switch off flame once it strains jam like consistency.
5. Let it cool. Store at dry place in an air tight container.
